Spicy Watermelon & Hot Honey Salad
A refreshing, light, and DELICIOUS summer salad idea! Perfect as an appetizer while hosting or as a dish to pass!
Ingredients
- 4 cups watermelon, cut into 1 1/2 inch chunks and chilled
- 1 English cucumber, chopped
- 2 cups arugula
- 1/2 red onion, sliced very thin
- 2 jalapeños, finely diced
- 1/2 cup feta cheese
- 1/4 cup fresh parsley, chopped (mint works great too)
- 1/2 cup Mike’s Hot Honey
- 3 Tbsp Stock Market Madagascar Black Pepper Extra Virgin Olive Oil
- 1 Tbsp Stock Market A-Premium White Balsamic
- Jacobsen’s Himalayan Sea Salt, to taste
- Jacobsen’s freshly ground black pepper, to taste
Directions
In a small bowl, whisk together the Mike’s Hot Honey, Stock Market Madagascar Black Pepper Extra Virgin Olive Oil, Jacobsen’s Himalayan Sea Salt, and Jacobsen’s freshly ground black pepper until combined. Set aside.
On a serving platter, arrange arugula; top with watermelon cubes followed by the chopped English cucumber, then the feta and finally the fresh parsley (or mint). Drizzle the prepared dressing over the top. Serve immediately.
